So I was on a Youtube deep dive the other day, trying to find another delicious recipe to cook and enjoy in front of the TV (guilty! – aren’t we all?), when I stumbled upon a channel that gave me serious “favorite aunt that cooks the most delicious food ever and gives you multiple Tupperware containers full of it when you leave her house” vibes: Rachel cooks with love recipes. I was so curious!
Who is Rachel cooks with love?
Her Youtube channel bio provides some information for us: Rachel Guzman is a food vlogger who joined Youtube in 2019. She is passionate about cooking (same!) and happiest when she is in the kitchen (same, but I must admit I also adore sitting at the dining table :)). Just like all “aunty vibes” ladies I know, she learned all her cooking skills from her mother.
And just like that, we have the guarantee that all her recipes will be exquisite! With 506k subscribers at the moment, it seems that there are hundreds of thousands of people who feel exactly the same.
Moreover, her attitude impressed me so much. She thrives on challenges but permits herself to fail sometimes. Shouldn’t we all think like this? No pressure, unless it’s in the crockpot!

Personally, I love all types of casseroles. They are easy to make, easy to store and easy to eat! Chicken casseroles are on top of my list because they cost little to make. Also, they can be adapted to have fewer calories (if you want to). Be careful, though, Rachel’s chicken casserole has a very important ingredient without which the final taste will not be as great: LOVE <3.

Ohh, how I love these words – “Pork delights”! I feel like pork is the type of meat that is delicious no matter how you choose to cook it. Always tasty, always juicy, always tender, always delicious.
Ribs are a type of cut that I could eat for breakfast, lunch, dinner and two snacks every day without ever being tired of them. Rachel’s recipe looks so good, I am afraid I will want to eat ribs made this way daily.

“Creamy” is one of my favorite words when it comes to food! Also, I had never heard of hearty dishes, but I decided to give it a try! I had never eaten a pastel azteca before discovering this recipe, but I have to tell you I found it delicious.

Mexican food is one of the greatest, most delicious types of food I have ever enjoyed in my life. Even though I live far from Mexico, I try my best to recreate recipes I find online. CHICKEN BROTH———————————-
2 lbs Chicken (1 large bone in skin on Chicken breast & 3 skinless boneless thighs)
8 C. Water
1/4 onion
3 large garlic cloves (crushed)
1/2 tsp freshly ground black pepper
1/2 tsp freshly ground cumin
2 large bay leaves
1 tsp Salt
GREEN SALSA—————————-
8 medium tomatillos
2 med Poblano peppers
1/2 tsp freshly ground black pepper
1/2 tsp freshly ground cumin
4 medium/large garlic cloves
3 whole Allspice
Small bunch cilantro
3/4 tsp Mexican oregano (optional)
2 tsp chicken bouillon
1/2 tsp Salt
2 Tbsp vegetable oil for cooking salsa
YOU CAN ADD VERY LITTLE BROTH IF NEEDED (don’t make filling too watery)

6 C. MASECA corn masa flour
1,tsp baking powder
