Lemon and cucumbers are great ingredients for hundreds of thousands of delicious, fresh recipes. I had no idea a combination between these two existed, but as soon as I discovered it I became a fan. Below you can find the best lemon cucumber recipes I tested this summer. Try them yourself and let me know if you like this new type of cucumber as much as I do!

What are lemon cucumbers?

The lemon cucumber is a tennis-sized type of cucumber. Contrary to popular opinion, it does not have a specific lemon taste. The “lemon” part of its name comes from its round shape and yellow, lemonish color. It is believed that they were introduced to the USA in the late 1800s.

How do you know if a lemon cucumber is ready to eat? Just make sure it has a bright, yellow color and is about the size of your fist. One lemon cucumber can feed one or two persons. Its taste is milder than a regular cucumber, which makes it great for more recipes than the traditional versions.

  1. Lemon Cucumber with pesto
This is the most popular way to eat lemon cucumbers. Thus, as they have a very mild, Mediterranean taste, it is just natural to pair them with pesto. A great snack for hot summer days.

2. Lemon Cucumber Pickles

Traditional cucumbers are, in my opinion, the best pickled vegetable or fruit you can have. I love eating them and drinking pickle juice when I want to feel refreshed. Consequently, lemon cucumbers have to be at least just as good pickled as their bigger, greener brothers.

3. Lemon cucumber salad

Of course, a salad is a great way to enjoy lemon cucumbers. Try this refreshing recipe for a great side to meat or other cooked veggies.

4. Brined Lemon Cucumber Pickles

For those of you who don’t like pickled cucumbers, try brining them. You will be able to keep them in jars for longer and the salty taste actually goes well with most meats and cooked veggies.

5. Lemon cucumber salad with red onions and raw almonds

If you are in the mood for a fresh, but unique salad recipe, you can try this Lemon cucumber salad. It is one of the easiest, fastest meals out there. You wouldn’t believe it at first, but lemon cucumbers, red onions and raw almonds go great together. Ingredients:

  • 2-3 Lemon Cucumbers
  • 1 Red Onion
  • 3-4 fresh mint leaves
  • ½ Cup Raw Almonds
  • 2 Tb White Wine Vinegar
  • ¼ Cup Olive Oil

How to prepare

  1. Slice the Lemon Cucumbers and Red Onion as thin as you like them. Arrange them in one layer over a plate. Sprinkle them with fresh mint leaves and slivered almonds. 
  2. Mix the Olive Oil and Vinegar with salt & pepper to taste. Drizzle over salad. That’s it!

As lemon cucumbers are a very new addition to western cuisine, there aren’t many recipes to pick from. I will keep trying any idea that pops into my head and update this list as I go. Who knows, maybe the next great lemon cucumber recipes will be invented by me! Joke 🙂
